Kaisou
Kaisou consists of a variety of dishes including seaweed and sea grapes. There are several types of seaweed here on Okinawa, including mozuku (a brown stringy seaweed), aoogonori (a green flat seaweed) and hogounori (a red seaweed). The different types of seaweed are served with a sauce or on salads. Sea grapes (umi budou) are a type of sea plant that looks like grapes on a vine. It is served as a side dish and has been called "green caviar."

Maguro – Tuna (reddish fish, soft and sweet, a favorite with people not accustomed to eating raw fish)
Shakogai – A type of tropical clam, Eaten fresh, you can enjoy its touch on the teeth
Ika – Squid (white, a bit rubbery in texture, sweet when served really fresh)
Unagi – Eel, cooked in soy sauce and sake, placed on rice and wrapped with seaweed
Tamago – Egg (omelet, sometimes sweetened with sugar)
Ebi – Shrimp (can be cooked or raw)
UniSea urchin (caramel colored, amorphous and slippery, tastes sweet)
Ikura – Salmon roe (bright orange salmon eggs on rice wrapped in seaweed)
